The hotel’s own on-site restaurant offers a fusion of old and new, with modern, innovative twists on authentic local specialities from the region and new, original approaches to authentic Italian classics. Tradition meets innovation as Ravioli di Ricotta alla Ragusana meets Cavati Broccoli e Salsiccia. Maccheroncini with fresh mushrooms are served with cavati and artichokes; or you can enjoy tagliatelle with walnuts; pasta with sardines and Tortiglioni alla Siciliana. Main courses are equally impressive. There is succulent braised pork, stuffed chops, Sicilian beefsteak and traditional local Ragusan sausage. All of these consort with the magnificent Baroque speciality of a generous helping of mixed roast meats accompanied by herbs and grilled local vegetables. To complete the meal, the delicious desserts on offer include Cannoli di Ricotta flavoured with Marsala wine, mousses, Cassata Siciliana, lemon sorbet and Crema di Ricotta, the latter made with fresh milk from Sicily’s flourishing dairy industry.

Area information

Ragusano is a region within a region: until 700 AD the enormously powerful Contea (or earldom) of Modica held the cities of Ragusa, Ibla, Scicli, Comiso and others, bestowing upon them common characteristics that are now found both in their regional traditions and in their beautiful rural landscapes. All situated within a few kilometres of each other, these cities have even more in common: their elegant and crumbling churches, their Baroque mansions and their settings, each is spectacularly elevated on a rocky outcropping. - Once you enter the city of Ragusa, follow the signs towards the historic city centre (Ibla).
